Cider Steamed Clams with Apple Relish and Chorizo

Clams

2 lbs of clams

one cup chorizo sausage

2 cup Washington Dry Cider

In a pot brown the chorizo. Add clams and the cider.

Cover and let steam until the clams open. Add the apple relish and stir.

Apple Relish

3 Washington grown apples, cored and chopped

2 fresh roasted poblano chilis, seeded and chopped

½ cup golden raisins

1 tbs. fresh lime juice

1 tbs. brown sugar.

1 tsp. hot smoked paprika

2 tbs. chopped cilantro

Place chopped apples in a bowl and the other ingredients.

Place steamed clams in a serving bowl and garnish with apple relish.
